ABOUT THE EVENING
If your new years resolution is to eat healthier in 2021, then this cooking class is for you. Chef Rebecca Carucci is a plant-based chef and food consultant. She is the owner of Powered by Plants Consulting, where she works with clients who come to her for cooking lessons, recipe development, and meal planning.
​
With a Plant-Based Nutrition Certification, through the T. Colin Campbell Center for Nutritional Studies at Cornell, she lectures throughout the Hudson Valley about the benefits of plant-based diets for both personal health and the environment.
She is the food consultant for Vegan Wines and specializes in pairing her plant-based recipes with a variety of vegan wines. Rebecca is passionate about showing the "foodie" side of veganism, specializing in "veganizing" classic recipes with an emphasis on nutrition.

Chef Carucci is going to show us how to cook one of her clients favorite dinners, Mexican Style Stuffed Sweet Potatoes. It is chockfull of omega 3, protein, iron, B12s and is guaranteed to satisfy your hunger for winter comfort food.

This night will be sure to delight the senses as we explore the exciting world of plant-based cooking.
Her special guest for the night will be Frances Gonzalez. Frances is the Founder and President of Vegan Wines, a completely vegan-friendly wine club, and Despacito Distributors, a plant-based wine distribution company.
